Preheat oven to 220°C fan forced. Combine oil, onion, bacon and carrot in large baking dish. Place into oven and cook for 5 minutes. Stir in the mushrooms. Spread mixture evenly over the base of the dish.
Arrange sausages over the vegetables and return to the oven. Cook for 10 minutes until sausages start to colour. Stir in the tomatoes. Cook, uncovered for 15 minutes until sausages are cooked through.
Season with salt and pepper, sprinkle with parsley and serve with mash potato or crusty bread.
