 24 button mushrooms, trimmed
 125ml balsamic vinaigrette
 24 pitted Kalamata olives
 24 cherry tomatoes
 24 cherry bocconcini
 24 large basil leaves
 Mayonnaise & lemon wedges to serve

Place mushrooms into a ceramic bowl. Pour over the vinaigrette and stir to coat. Cover and refrigerate 30-60 minutes until mushrooms have absorbed the dressing.

Thread the marinated mushrooms onto skewers alternately with Kalamata olives, cherry tomatoes, cherry bocconcini and basil leaves onto skewers. Serve with mayonnaise and lemon wedges.
